You export it, in open formats. Products that store notes and documents as files make that trivial by construction; the rest provide full export paths. Exit rights are part of the design, not a negotiation.

Who controls desktop app updates?

Lisan does, end to end: installers are code-signed and served from updates.lisan.org, Lisan's own release infrastructure, with stable and beta channels.
